Hello my dear and Fluffy Teddy Bears!
My name is Solfrid, and I`m a 35 year old Norwegian girl, wife and mom.
10 years ago I started my Plant Based Journey deciding to become a vegetarian. The animal protection community had this challenge «30 days for the animals». During this time I came to realize that I really enjoyed vegetarian meals.
I spent many years converting to a Plant Based diet.
I had been this girl who could eat whatever I wanted and how much I wanted and still stay really slim, but one day I looked in the mirror and realized my body was changing. I was not going to let myself get overweight, so I decided to become a vegan.
After following the online vegan community for some time, I became aware of what the definition of a vegan really was, and that it wasn’t in my best interest to label myself.
I discovered the term "Plant Based" , and after a lot of research and new discoveries I came across "The Starch Solution" which made me passionate on a complete new level. My body was really thriving on this diet.
My diet is not about ideology, but personal preference, and a wish to stay healthy and be the best version of myself.
So what do I eat?
I eat plant based for the most part in my day to day life, but I`m not restricting myself. If I crave fish or steak on a rare occasion I will eat it, but the funny part is that it every time reminds me of why I love plant based food so much.

I want you to be the best version of yourself and to show up for yourself with love, humility and respect every single day for the rest of your life.
I think it`s important to listen to your body at all times and do what feels right for you, and at the same time have your bodies best interest in mind.
I can not tell you that there is that one perfect diet for everyone. But I strongly believe that a Plant Based diet, and the "Starch Solution" by Dr. John McDougall can be life changing for many people.
Weather you eat animal products or strictly a Plant Based diet I believe vegetables, fruits, whole grain, nuts and seeds are important, weather it be next to your gras feed beef, beans, or simply because you like variations.
